The Region has an extensive coastline, France's finest shellfish beds and a long history of sea fishing so it is no surprise that good seafood features on most menus. Here are a few local specialties to look out for and also make sure you take a copy of our free French menu reader with you when you visit the restaurant:

Chabichou is the famous local strongly flavoured goats milk cheese.
Mouclade - a dish in which mussels are prepared with egg yolks, white wine and cream.
Chaudree - a fish stew in which a variety of fish and shellfish are cooked in a court bouillon with white wine and shallots.
Charentaise melons are famous and here they are often served chilled with a good measure of Pineau des Charentes.
For seafood lovers the obvious starter is oysters although an unusual alternative is grilled elvers (civelles).
There is an abundance of fish including local caught sole, turbot, mullet and fresh sardines.
Those preferring meat can try confit de canard (duck breast conserved in its own fat).
There are a wide range of local cheeses including those made with sheep's milk (brebis) and goat's milk (chevre).
